Mexican Footing Beefiness Casserole with rice
This is essentially the filling for the Mexican Stuffed Peppers I shared a few weeks ago. Why am I bothering?
Because when I share a pork chop recipe on Instagram, people always enquire if it can be made with chicken.
When I share a chicken thigh recipe, people always inquire if it can be made with breast.
And when I share Mexican Stuffed Peppers, people ask if it can exist fabricated without the peppers…… 😂😂😂
Which actually, as foreign equally it sounds, I thought was a very valid question because I can imagine how irritating it would be to sentry that stuffed peppers video and drool when the juicy beef rice filling comes oozing out, knowing full well you take no peppers in your refrigerator.
So – hither's the filling recipe which is a Mexican flavoured basis beefiness casserole made with rice. It's mouth-wateringly delish!!!
What you need for Mexican Basis Beef Casserole
Here's what you lot need. Experience free to substitute the capsicum, born and beans with other vegetables of pick – you need about 5 to 6 cups of diced veggies in total.
How to brand this Mexican Rice Casserole
This is a one pot quick dinner that will exist on your table in 30 minutes!
Essentially, it starts by browning the beefiness with onion and garlic, then you add together a ton of Mexican spices, rice and liquids then you lot give it a big stir and let it simmer away on the stove until the rice is tender.
To requite it a expert slug of extra season, I similar to stir in cheese as well as dark-green onion for freshness (I also like doing this considering I become a kicking out of watching the cheese melt into the rice 😇), top with a scrap more cheese, clamp the chapeau on and leave information technology for a infinitesimal to let the residual heat to melt the cheese.
The texture of thisrice goulashis like a flossy risotto – except it tastes like juicy Enchiladas.
I dear the pops of flavour and texture from the corn and beans – adds extra interest!

1. Rice - recipe works best with long grain white rice. Will as well work with medium or curt white rice grain, "standard" (unspecified) white rice, jasmine* or basmati rice*. Recipe equally written won't work with: brown rice, wild rice, risotto, paella rice, quinoa.
ii. Corn - can also utilize frozen, ane 3/four cups.
iii. Cheese - apply anything that melts! Cheddar, mozzarella, tasty, Monterey Jack, Colby.
four. Cayenne adds spiciness, this corporeality across a vast book of rice is barely noticeable. Increase or eliminate if desired.
5. Leftovers will keep for 3 days in the fridge, reheat in microwave. I haven't tried freezing merely I don't meet why it wouldn't freeze ok!
6. Diet per serving, this is quite a generous serving (about two packed cups, and it's dense so very filling!). Every loving cup of cheese adds 100 calories per serving, and then if you want to cutting back on calories, halve the cheese (don't skip completely!).
